  Are you fwc or Rwc? Believe fwc should be hotter.

  Fresh water cooled - you have a heat exchanger. Raw water cooled - no heat exchanger.

  My 6.2 is RWC and runs at 160* via VVMobile app. I believe the 160* stat is what is supposed to be in the engine.

  Marine engines commonly use 160° thermostats to provide more complete combustion and increase fuel economy. Any hotter (190°) and gas pockets could form, and at lower temps there's more unburnt hydrocarbons in the exhaust, which equates to fuel in the water.
