Moisture Control in cabin over winter

Looking for some advice on the best method/material to use to control/eliminate moisture in the cabin and cockpit over the winter. I am concerned with the fluctuation of temperature creating moisture and mold. Any suggestions would be appreciated.

For the rinker i just keep the door cracked enough so the cats cant get in, im parked under a large metal garage.
