Waeco thermostat broken-ish

The thermostat on my galley fridge is not quite right. The fridge works but it only gets marginally cold. Turning the thermostat knob offers zero resistance, but it does stop at the limits and I was able to turn the fridge off.
The thermostat knob on my cockpit fridge has some resistance and the fridge runs nice and cold.
I'm planning to remove/disassemble and if necessary replace the galley fridge thermostat. I couldn't figure an easy way to remove the thermostat assembly (no visible screws); any tips before I end up breaking it?
