Prop Dimensions and Pitch

I have just purchased a 1992 Rinker 235 Fiesta Vee.  The survey and sea trial went very well but the prop is obviously not the original.  I am thinking of getting a stainless steel prop (I know its an indulgence!) for better fuel economy while cruising.  Any guidance about how to figure out which prop size and pitch would work best?

    So I have learned the following. Initial Specs for boat tested for Cruising World back in 1992: 
    Single 230-hp 5.7 liter MerCruiser Bravo Two V-8 Gasoline Stern Drive with 350 CID, 4.00" bore X 3.48" stroke swinging a 16 3/4 " X 21" three bladed stainless-steel prop through 2:1 reduction.

    So I am looking at a 16 ¾ " three-bladed prop with a 21" pitch.  Any variations to that to increase fuel economy for cruising?

    (In the boat test for Cruising World, the sweet spot was 3000 RPM yielding 2.05 Nautical MPG at 19.7 knots.)

    Call Hill Marine and put a big cow prop on that B2

    Prop will cost more than the fuel saved!!
