Okay, I'm going waaay back in time here but the 454 I had - had a 160 degree T-Stat. At idle it would run 160 but if run hard would climb to maybe 170. My 454 was carbed so the newer ones may be running a bit hotter. If you are getting way lower temps you could ground your T-Stat to the block. If the temp jumps up then the continuity ring in the T Stat may be cr*pped.
I think you're doing all right. My two 2014 Mercury 502 Magnums - catalysts - run at about 175 degrees on plane normal under load 3/4+ fuel. full water, 1/2 waste and the usual cruising stuff. *Al would have the final word here if he's monitoring this thread.
