2003 rinker 212 captiva with a merc 5L EFI engine died all of a sudden

Hi folks , has anyone experienced this issue , approx a month ago my boat from an idle just died ,i restarted it while travelling it died again and I couldn't  restart , we checked the rail fuel pressure which was fine , but no spark so I changed the rotar and cap and the ignition coil( which wasn't cheap) and it ran fine for approx a month now the same issue again , and it seems ramdon as died I waited approx 20 min and it restarted , oil and temp indicators all showed normal . I believe there have been issues with the low oil pressure sensor but I believe it has been replaced but not sure . Can anyone shed some light on this issue , love the boat just don't trust it to run

I'd check the obvious things like the main electrical connector on the top of the engine,  the ignition switch and the tether switch on the shifter.

Plug wires good? Specifically the coil wire?

All that appears fine and plug wires and coil all new , yesterday I was out with it and while cruising it started losing power , I hit the throttle and it recovered very strange .

Seeing it died from a cold idle also several times , could it be the IAC valve?
