Rinker V170 Interior Re-Do

Hi all. New to the board.
I'm the proud owner of an early 80's Rinker V170. 17' I/O Mercruiser 140. Engine is great, hull is great, but my interior is slowly deteriorating. I know I need to install new carpet at some point, and perhaps a new floor. I need to build a new motor cover, and cover over the stern (that houses the battery etc...) I have several questions, the most important of which would be...is it worth it? I have no reason to get a bigger boat (well...except having a bigger boat), but we ski, tube, troll for salmon (lake michigan), and enjoy family time. We love the boat. How much can i expect to spend by gutting the boat and starting over with new flooring/carpet, vinyl. It is in pretty bad shape. Also, what kind of wood would I need to build the box over the motor?
So many questions...Please let me know your thoughts.

IMO, it is a keeper - if you are at all handy with wood and have a place to work on it it is a great boat and there are lots of upholstery shops that can make the interior look like new.
