IMHO, it would cheaper and you would get better beds if you just buy some high quality, dense foam material and cut it to fit your boat. I use a standard full size in the aft cabin of my boat, it's almost identical to yours. For the v-berth, I just purchased the same memory foam stuff and cut it to fit. I have maybe $400 invested in two beds, people say its like sleeping on a cloud! You can also trace the outline of your v-berth on a flat sheet, take to anyone that does alterations and have them make you a couple fitted sheets, $25-$30 bucks.
We got a 4" thick mattress cover pad from Laura Ashley that was amazing. We contemplated having a spring mattress with foam topper, like in a home bed custom made but as that was going to cost about $500 we tried the pad first. It was great.
