Sea Trial Issues

Well, the day finally came, sea trial and delivery of new to us 2000 FV270. 5.7L EFI, not the MAG model. When picked up the boat had a little less than a 1/4 tank of old fuel with stabilizer in it. I topped up the tank with premium on the way to launch.
Engine fired right up, oil pressure all good, idled like a dream. Hit the throttle to get on plane, and a little sluggish at first, but first time on the water in over a year. Finally up on plane, and all of a sudden, engine cuts out for a second, two beeps and then comes back up to speed. Shut her down, checked oil levels, drive oil tank, etc. All good. Start her back up, no problem, throttle up, just past 3000 RPM, same thing, engine cuts, two beeps, then back to speed.
A call to the shop suggests that it's just the "old" fuel working its' way out of the system, but as we try and continue, issue crops up with more frequency, anywhere from 2500 RPM and up. At no wake speed, no problem, runs like a champ. IAC? MAP sensor? Simple as gummed up fuel filter?

Print this for future reference. Sorry about first day out.
Could be fuel filter, not MPI, it's the old Chevrolet throttle body system.
There is a small hold back to cover final acceptance and clearance of issues like this. Boat has otherwise been carefully surveyed and there is some give and take involved in the acceptance of a trade from me with no hassles. Long story short, plan on working through the issues with the dealer, hopefully without having to return to the dealer as its a bit of a haul. But be sure that if it's not a dockside fix, it will go back.
Thought maybe somebody has seen a similar situation to get an 8dea which way it might go.

But definitely more predominant after 3000 RPM, was happening still randomly but spaced together as close as 5 to 10 seconds apart. No problem at all below 2500 RPM's or so. And doesn't seem to be going into protection mode, just a split second cut-out, like someone turned the key off and right back on again.
Had taken yesterday and today off to commission the boat, so hopefully get a resolution today. Will keep you posted.

And then today, while checking some more, find that the Jabsco electric head pump is also not working properly. Won't suck raw water in, and although after a few seconds it will drain the bowl, after a few minutes what's in the waste tank is flowing back into the bowl. I confirmed with some coloured tank treatment I had. So the seals in that are bad.
And after all that, and using a hose to try and prime the Jabsco pump I noticed the shower sump also not pumping, water was building up in the shower sump box and overflowing into the bilge. Makes me think maybe things weren't winterized properly at some point.
So will be adding that to the Tuesday list also. Starting to wonder....

hot water heater is rotted out as well, I just dont have the energy for that one..
