Yea it really depends. Things specific to the Rinker 342 like the aft filler cushions will be hard to come by, I bought mine from someone on this site. You’d either need to buy them here from someone selling or check greatlakesskipper. For canvas there is a guy on this site who can get you factory canvas new at great prices.
Maybe a good look around Craigslist or eBay too, may have some things coming up from the carnage south. I got a second set of canvas from a gent who lost his vessel in Sandy but the canvas was home.
There are quite a few things you can find on greatlakesskipper.com.
The filler cushions are a little bit of a white whale. As mentioned, having some made would be an option. I had a set I never used which I sold to a member here.
i have the rear filler cushions in great shape. I never have used them and i keep them in my basement. The only problem is they are going to be expensive to ship. I would like a $100 plus shipping if you are interested.
+1 for @boattech01 for canvas. I ordered a new front bimini window for my 270, great price and had it in about 3 weeks. email TJ for a quicker response. boattech01@aol.com
Full camper canvas, installed, expect $3k to $5k depending on options. More if you get it custom-made with high-end windows, less if you can find off-the-shelf parts.
The great part about working with TJ to buy canvas is that he is going to sell you the same pieces that came with your boat, so you don’t have to buy the whole thing. Buy just the pieces you need each year.

As for canvas, you can find places that still have OEM canvas for boats like: http://rnr-marine.com/auto/Rinker_342-Fiesta-Vee_(2001-2004).shtml#products
But you may be happier with talking to a local canvas shop. Any number of changes could have been made to your canvas setup by previous owners.
Happy hunting!
