I replaced mine with just a hatch and then have complete access behind it.  Your area behind yours may be a bit different than mine.  I guess I need to finish off my topic with some pictures, but here it is:

Thank you both for your recommendations.  I think a custom door is a great option that will look nice and give me good access to the area behind the seat.

I put a plastic bin inside the area behind the new panel, which was after I took the pictures (so it's hard to tell how much space there is, but you can see the ice maker in there for relative size).  I had a space back there that basically fit a container the size of a clothes basket.  I keep my tools and cleaning supplies in there.  Here are a couple pics of the finished product:
