Can both u-joint on the drive shaft be replace whiteout removing the drive shaft from the sterndrives.

No
drive has to be pulled. Some gen 1 alphas have zirk fittings on u j's but most gen 2 or new u joints have no zerks.

I know that the drive as to be pull out but does the drive shaft has to be remove from the sterndrive completely

it's clumsy to handle, but, sure- they can be pressed out w/o removing the shaft.

no need to remove entire shaft.They work and can be removed like any other u joint assembly.
